Rachel McCoig

Food and Beverage Manager

Rachel McCoig, a Food and Beverage manager, joined the Convention Center staff in 2013 and has extensive experience in food service.  She oversees and supervises banquet servers and is responsible for planning, budgeting and executing all catering and concession events.

McCoig did her undergraduate studies in food and nutrition at Auburn University from 1990 to 1993. She then served in a culinary internship at the Hotel Nicolay in Zeltingen-Rachtig, Germany, in 1994.

Most recently, McCoig was the Food Services director for Valley Services Inc. at Hiwassee College in Madisonville, Tenn. She was also interim Food Services director at Tyler College in Tyler, Texas.  Her next position with Valley Services was with Coca-Cola headquarters in Atlanta, where she oversaw a $10 million annual operation that included refreshment, catering and dining services.

Originally from Montgomery, Ala., McCoig has worked throughout the South in the food service industry before settling in Knoxville. She enjoys volunteering for the Junior Achievement program and teaching career success to high school students in the Andersonville, Tenn., schools.

How long have you lived in Knoxville?

I have lived in the Knoxville area since the fall of 1999 but worked in areas other than Knoxville until recently.

What is your favorite activity to do in Knoxville?

I love to go out to eat and to the movies! Each area of Knoxville has its own unique flavor and style. So no matter what restaurant and movie theater we pick, it is always a fun and unique experience combined with interesting hot spots and shopping to explore. Since I have started working downtown, we often come to Market Square, which always has musicians playing outside or galleries to visit while we are waiting for a movie to start.

What is your favorite location in Knoxville?

We recently moved to the Norris Lake area and really enjoy the water and countryside. The Knoxville metropolitan area has many beautiful waterfronts, walking trails and hikes to explore. World’s Fair Park is a great spot right next to the Knoxville Convention Center. You get the best of both worlds here!

What do you think sets Knoxville apart as a great city to visit?

There is so much variety. Great arts, shopping, attractions and outdoor activity.

What is your favorite part about working at the Knoxville Convention Center?

I wanted to find a workplace that would support helping my community grow. I have worked all over the South for a long time and developed skills that I used in other areas besides my home base. At the Knoxville Convention Center it is our vision to be part of the growth of our community. I love being a part of that!
